Vegetable Fried Rice & Pepper flavored Chicken Stir fry

Vegetable fried rice served with a simple chicken stir fry , nothing could be as easier as this dish I would say and kids would love it too. You can whip up this dish with any vegetable on hand be it diced carrots, green peas, shredded cabbage, bell peppers, potatoes, green beans, paneer, eggs or anything else that hits your imagination. But the secret to a perfect fried rice lies in the rice. Left over rice serves this purpose. If you are using freshly cooked rice, let it cool completely. When I do not have left over rice, I cook basmati rice, transfer it to a wide plate, leave it in the refrigerator for a while to cool off quickly, and then use it. I often cook fried rice with a stir fry to go with on the side. In my early years of marriage, when me and hubby dear went for walks in the evenings, used to stop by at a street vendor who makes this delicious fried rice and serves it with veg. Manchurian. I’m so obsessed with this combo, that I end up ordering this dish everytime on my trips to India. Vegetable Fried Rice
Ingredients:
3 cups of cooked rice (I used basmati rice)
3-4 tbsps of cooking oil
1 medium onion chopped
2 cups of mixed vegetables diced (carrots, green peas, french beans,capsicum or any other veggies of your choice. I parboil veggies like carrots, green peas, potatoes before frying)
1 tsp ginger & garlic paste
½ tsp red chilli powder (adjust)
½ tsp white pepper powder (adjust) (substitute black pepper powder if white pepper is not available)
1 tsp kasuri methi leaves crushed (dried fenugreek available in almost any indian grocery store)
a pinch of ajinomotto (optional)
2 tsps soya sauce (I used dark soya sauce)
Salt to taste
Spring onions for garnish
How to:
- In a wok, heat oil to smoking point and throw in the chopped onions. Saute them for about 2-3 mts on medium high heat.
- Now throw in the diced vegetables, add salt and fry on high heat for another 2-3 mts stirring frequently. Do not over cook the vegetables. Just cook them till tender.
- Add ginger & garlic paste and saute for another 2 mts. Add red chilli powder, white pepper powder, crushed kasuri methi leaves, and saute for a minute. Add ajinomotto and soya sauce, and saute for a minute.
- Now throw in the cooked rice, and mix well with all the vegetables. Adjust salt. Continue to fry on high flame for another 3-4minutes. Just before swithching off the flame, add chopped spring onions.
- Serve hot with pepper flavored chicken stir fry (recipe below)
Pepper flavored chicken stir fry
Ingredients:
1 lb of boneless chicken cut into small bite sized pieces (about ½ kg)
3-4 tbsps of cooking oil
1 garlic clove (finely chopped)
3 green chillies (adjust)
8-10 curry leaves
1 medium onion chopped
¼ tsp turmeric powder
½ tsp red chilli powder (adjust)
½ tsp white pepper powder (adjust) (substitute black pepper powder if white pepper is not available)
a pinch of ajinomotto
1 tsps soya sauce
Salt to taste
Few drops of red food color (optional. if using the powder form, mix in with a few drops of water and add it to the dish)
2 tbsps freshly chopped coriander leaves
Juice of a lime
Spring onions for garnish
How to:
- In a wok, heat oil to smoking point and throw in the chopped garlic. Fry for a few seconds till the garlic flavor comes out. Then add curry leaves, green chillies, chopped onions. Saute them on high heat till soft (about 2-3 mts).
- Add turmeric powder, chilli powder, white pepper powder and salt, mix well.
- Add chicken and fry on medium to high heat till the chicken is thoroughly cooked.
- Add ajinomotto, soya sauce and red food color, fry for another 1-2 mts oh high heat. Adjust salt, chilli powder if required.
- Just before turning off the flame, add in the freshly chopped coriander.
- Squeeze on the lemon juice, garnish with spring onions and serve hot with vegetable fried rice.
Tips for a delicious fried rice:
- Rice should be crisp. To ensure this, use left over rice to make a flavorful fried rice. The best way to do this, is cook rice in the night and leave it in the fridge. Take it out 30 mts before you make the fried rice.
- Make sure your rice does’nt have any lumps. work out with your hands to break the lumps. This helps ease the process while mixing with vegetables.
- Always cook on high heat. Preheat the wok before adding in oil and other ingredients.
- For easy stir frying, make sure you have all the ingredients arranged on a plate in the order of frying. This will save a lot of time.
- Work out with your hands and fry constantly 🙂 like the way they do in chinese restaurants.

Even I like adding kasuri methi. That gives a nice flavor to the dish. But it should’nt be added more than required.

Thanks for the nice words mrunalini. I’m glad you tried my recipes and liked them. I use a measuring cup while blogging recipes. So when I mean 1 cup it is approximately equal to 250 ml when measuring liquids like oil, water etc., and approximately equal to 185 gms of rice (if uncooked) and 125 gms (if cooked). Hope that helps. Measuring cups are usually available in all major departmental stores these days. Below is a link just so you have an idea of how they would look like.
